Welcome Summer with Gymboree and Be #LocalLegends

While the calendar won't officially say summer for a few more weeks, every kid knows the official start to summer is Memorial Day. Even if you have to go to school after Memorial Day, you are just biding your time and counting the days until summer break is finally here! This weekend brings the first big barbeques of summer and looking at the weather forecast, the temps are definitely on the rise.

It's definitely time to open that pool! Once the kids are out of school and things are more relaxed, what's next on the agenda? That's the $64,000 question, right?

You don't have to take a fancy vacation or spend a lot of money to have fun this summer. Not everyone can afford a week at Disney or a trip to Florida. Why not just take the time and become a #LocalLegend?  What does that mean? Simple. Think back to the days of your childhood. If you're my age(cough) you probably remember long summer days spent with your friends--riding your bikes, playing tag, catching lightning bugs after dark. Summer meant trips to the local pool, dripping popsicles and hours on end spent swinging on our swing sets and running through sprinklers.

We didn't have day camps, sports camps or day care to fill our days. We may have gone to Vacation Bible School and if we were really lucky, our parents would pack us up for a Myrtle Beach vacation which was the absolute highlight of our year--after Christmas, of course!

Times are different, but you and your kids can still be #LocalLegends. Take the time to relax this summer. Make a trip to the community pool. Have a picnic at the park. Explore your area and look for hiking trails, waterfalls, and natural wonders that are right in your own back yard. Search for local sights and events that can make summer fun. (We have the Mothman Museum nearby that's a fun day trip for older kids as well as Blenko Glass where you can watch glassmakers in action. Another fun spot is The Mystery Hole.)

Your local library is also a great place to hang out in the summer. Check their schedules for summer programs for kids or just take the kiddos on a weekly excursion. It's a great way to grab some quiet time and teach them a love for reading at the same time. (Yeah, I know. They spend all day reading their iPads and maybe even their iPhones, but there is nothing like a BOOK in your hands to foster a love for reading.)

There are lots of ways to have a fun-filled summer without breaking the bank or straying too far from home. It make take a little thought, but if you work it right, you'll never hear the dreaded "I'm BORED" whine out of your kids this summer!

Pies, Pies, Pies! Wewalka Pie Crusts Review & A Chocolate Pie Recipe

I received samples to facilitate this review of Wewalka pie crusts. All opinions are my own.

I've told you about Wewalka pizza dough and puffed pastry before, but now Wewalka makes pie crusts. I was delighted to be able to sample their pie crusts and put together a few desserts for my family. Who doesn't love pie?

First, I have to tell you that in all honesty, pie crusts are one type of dough that has always intimidated me. I've never been able to get that perfect, flaky pie crust when I've made my own, so I usually resort to store bought doughs. What I like about the Wewalka pie crust is that it has no lard and the dough definitely seems a bit thicker than the kind I usually buy. That means it's easier to handle.

The dough also comes rolled on parchment paper which is another thing I love about Wewalka doughs.  I worried the dough would be too cold straight from the fridge and break apart on me when I unrolled it, so to solve that problem, I just sat the dough out for a few minutes while I was gathering all my ingredients and when I was ready to make the pie, it worked out perfectly. Using the parchment to roll out the dough keeps it from cracking and I wound up with a perfect crust for my apple pie!

Isn't that a beautiful pie? The crust was so flaky and light. That's also a BIG 9 inch pie pan and the dough was the perfect size. No trimming was required.

Keep in mind that each package contains one crust, so if you're making a pie with a top crust, you'll want to pick up two packages.

I also made this lovely cherry pie with a lattice top. Again, the crust was so yummy and absolutely perfect!

Who can resist a slice of cherry pie with ice cream? I know I can't! I had so much fun baking pies. I realized as I was baking that I just don't do this enough. My family was also very happy to have these delicious treats because usually pie is reserved for holidays around here.

I may have gone a little overboard with the pies. My mom loves chocolate pies with meringue topping. I remember her baking at least a half dozen of these at a time over the holidays when I was a child, but at some point, she stopped baking and I decided to surprise her with her favorite pie. I managed to get my sister to hand over the recipe and whipped one up using the Wewalka pie crust as a base. 

Isn't it pretty? I know she loved it. I sent it to her warm and asked her to take a picture of it when she cut a slice, but she forgot to do it. I'm sure it was as pretty inside as it was out. 

If you'd like the chocolate pie recipe, this is the one I used. I'm sharing the photos because I love seeing old recipes hand written out! This is from an old Betty Crocker cookbook from the late 1950's.

I still have a few crusts that I want to use to make some other desserts from the Wewalka site. Perhaps these Crispy Chocolate Mousse Bites or these Macaron Squares.  Make sure to follow me on Instagram to see what I bake next!
