I have to admit, I was a little concerned about freshness because the trays were prepackaged and available in my store's deli case. I was pleasantly surprised to find when I opened the individual packages, the meat and cheese were perfect. There wasn't any excess condensation on the bags and everything was very fresh. It was easy to just open everything up and put it on the tray. It even looked pretty for serving.
